Here at Blue Sky we have a strong ethos for using local suppliers who provide us with high quality foods, craft beers from around the world, fair trade teas and coffees, and organic ingredients wherever possible. If we can’t get what we need locally our policy is to seek out wholesome traders who share our values.

Matts enthusiasm for creating great food is matched only by his keenness for craft beer! He’s been at Blue Sky from the beginning and always up for a challenge. very much a perfectionist when it comes to food he’s constantly on the look-out for new tastes and dishes. Our twice yearly change of menu is driven largely by Matt’s appetite for challenges.
